Plated Day 3

Last night I got lazy and we decided to order pizza. Sorry (not sorry). So tonight was the 3rd and final Plated meal that was left from this shipment. This was the meal that actually caught my eye for this week in the first place. Plated had posted it on their Instagram account and I thought it looked fun.

This meal was called Caribbean Banana Leaf-Steamed Fish with Pineapple Ginger Salsa. Can you say yum? The meal came with actual bananas leaves (and tons of them...)

I put my hand next on them so you can see the INSANE amount of banana leaf there was. I ended up cutting it down a bit.

It was a very easy meal to prepare. The tilapia was sprinkled with a spice mix made of allspice, turmeric, brown sugar, and annato seed. They were stacked with slices of lime before being wrapped up in the leaf.

Off to the oven they went.

Meanwhile, I caramelized the pineapple and fresh ginger for the salsa and chopped up the avocado and radishes for the side salad.

Definitely felt like a trip to the Caribbean.
